You can make this incredibly rich and creamy Buckeye Fudge without turning on your oven. This recipe delivers the classic chocolate and peanut butter flavor of buckeye candies in an easy-to-slice fudge format, perfect for holidays or simple desserts.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 pound (16 ounces) powdered sugar, sifted
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon shortening or coconut oil

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large bowl, beat the softened butter with an electric mixer until smooth.
  3. Add the powdered sugar, peanut butter, vanilla extract, and salt to the butter mixture. Beat on low speed until combined, then increase speed to medium and beat until the mixture is completely smooth and creamy. This is your peanut butter layer.
  4. Press the peanut butter mixture evenly into the bottom of the prepared pan. Smooth the top with a spatula.
  5. In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is fully melted and smooth.
  6. Pour the melted chocolate evenly over the peanut butter layer. Gently spread the chocolate to cover the entire surface.
  7. Refrigerate the fudge for at least 2 hours, or until the chocolate layer is completely firm.
  8. Use the parchment paper overhang to lift the fudge out of the pan. Place it on a cutting board and slice into small squares.

  • For the creamiest texture, ensure your butter is fully softened but not melted before mixing.
  • If you prefer a thicker chocolate layer, you can double the chocolate chip amount for the topping.
