Ingredients
Scale
1 pound ground beef
1 packet taco seasoning
1 head iceberg lettuce, shredded
1 cup shredded cheddar cheese
1 cup crushed Nacho Cheese Doritos
1 cup Catalina dressing
1 cup cherry tomatoes, halved
1/2 cup black olives, sliced
1/2 cup corn, drained
1/4 cup chopped red onion
Instructions
Cook ground beef in a skillet over medium heat. Drain grease and stir in taco seasoning. Let cool.
In a large bowl, combine shredded lettuce, cheddar cheese, crushed Doritos, cherry tomatoes, black olives, corn, and red onion.
Add the cooled taco-seasoned beef to the salad.
Pour Catalina dressing over the salad and toss gently to combine.
Serve immediately or chill for later. For make-ahead, keep dressing and Doritos separate until serving to prevent sogginess.
Notes
For a lighter version, use ground turkey instead of beef.
Add a layer of refried beans at the bottom of the serving bowl to create a barrier against sogginess if preparing ahead.
Consider this a great option for meal planning, offering a satisfying and flavorful dish.
