A classic 1980s Midwest potluck favorite, this Dorito Taco Salad features seasoned ground beef, crunchy Nacho Cheese Doritos, and a tangy Catalina dressing. Perfect for weeknights or gatherings, with tips to keep it fresh.

Ingredients

Scale
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup crushed Nacho Cheese Doritos
  • 1 cup Catalina dressing
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup corn, drained
  • 1/4 cup chopped red onion

Instructions

  1. Cook ground beef in a skillet over medium heat. Drain grease and stir in taco seasoning. Let cool.
  2. In a large bowl, combine shredded lettuce, cheddar cheese, crushed Doritos, cherry tomatoes, black olives, corn, and red onion.
  3. Add the cooled taco-seasoned beef to the salad.
  4. Pour Catalina dressing over the salad and toss gently to combine.
  5. Serve immediately or chill for later. For make-ahead, keep dressing and Doritos separate until serving to prevent sogginess.

Notes

  • For a lighter version, use ground turkey instead of beef.
  • Add a layer of refried beans at the bottom of the serving bowl to create a barrier against sogginess if preparing ahead.
  • Consider this a great option for meal planning, offering a satisfying and flavorful dish.
