Make this simple, cheesy Dorito Taco Casserole for a quick, satisfying weeknight dinner. It uses ground beef, taco seasoning, and crushed chips for a crunchy topping.

  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10 ounce) can red enchilada sauce
  • 1 cup sour cream
  • 2 cups shredded Mexican blend cheese, divided
  • 1 bag (9.25 ounces) Nacho Cheese Flavored Tortilla Chips (Doritos), lightly crushed
  • 1 cup shredded lettuce (for topping)
  • 1 cup diced tomatoes (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef in a large skillet over medium heat until browned. Drain off any excess grease.
  3. Stir the taco seasoning mix and water into the cooked beef. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the liquid has mostly evaporated.
  4. In a large bowl, combine the seasoned beef mixture, cream of chicken soup, enchilada sauce, sour cream, and 1.5 cups of the shredded cheese. Mix well.
  5. Spread half of the crushed Doritos chips into the bottom of the prepared baking dish.
  6. Spoon the meat and cheese mixture evenly over the layer of chips.
  7. Sprinkle the remaining crushed Doritos chips over the top of the casserole mixture.
  8. Bake for 25 minutes, or until the casserole is bubbly.
  9. Remove from the oven and sprinkle the remaining 0.5 cup of cheese over the top. Return to the oven for 5 more minutes, or until the cheese is melted.
  10. Let the casserole rest for 5 minutes before serving. Top individual servings with shredded lettuce and diced tomatoes.

Notes

  • For a vegetarian option, substitute the ground beef with 1 pound of cooked black beans or a plant-based ground substitute.
  • If you prefer a crispier topping, reserve the final half-cup of cheese and sprinkle it on for the last 5 minutes of baking instead of the last 10 minutes.
  • You can prepare this layered bake ahead of time. Cover and refrigerate for up to 24 hours before baking. Add 10-15 minutes to the initial baking time if baking from cold.
  • Serve this cheesy ground beef casserole with a side of Mexican rice or a simple green salad.
