Ingredients
Scale
1 lb boneless, skinless chicken breasts
1 cup dill pickle juice
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups grated Parmesan cheese
1/2 cup panko breadcrumbs
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons olive oil or cooking spray (for baking)
Instructions
Place chicken breasts in a bowl or resealable bag. Pour dill pickle juice over chicken, ensuring it is fully submerged. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
Preheat your oven to 400°F (200°C) or your air fryer to 380°F (190°C). If baking, lightly grease a baking sheet or spray with cooking spray.
Remove chicken from pickle juice and pat dry with paper towels.
Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second dish, whisk the eggs. In the third dish, combine grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, black pepper, and salt.
Dredge each chicken breast in flour, shaking off any excess.
Dip the floured chicken into the beaten eggs, allowing excess to drip off.
Press the chicken into the Parmesan-breadcrumb mixture, ensuring it is fully coated on all sides.
For oven baking: Place coated chicken on the prepared baking sheet. Drizzle with olive oil or spray with cooking spray. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the coating is golden brown and crispy.
For air frying: Place coated chicken in the air fryer basket in a single layer, working in batches if necessary. Air fry for 15-18 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C) and the coating is golden brown and crispy.
Let the chicken rest for a few minutes before serving.
Notes
For extra flavor, you can add a pinch of cayenne pepper to the Parmesan mixture.
Ensure your chicken is patted very dry after marinating for the best crispiness.
Serve with your favorite dipping sauce or a side salad for a complete meal.
