Crockpot Pot Roast

Enjoy a tender, fall-apart pot roast made easily in your slow cooker. This recipe is perfect for a cozy Sunday supper or any weeknight family meal.

Ingredients

  • 34 lb chuck roast
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • 2 tbsp cornstarch (for thickening gravy)
  • 1/4 cup cold water (for thickening gravy)

Instructions

  1. Pat the chuck roast dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned.
  3. Transfer the seared roast to your slow cooker.
  4. Add the chopped onion, carrots, and celery around the roast.
  5. Add the minced garlic.
  6. In a bowl, whisk together beef broth, red wine (if using), Worcestershire sauce, soy sauce, thyme, and rosemary. Pour this liquid over the roast and vegetables.
  7. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the roast is fork-tender.
  8. Remove the roast and vegetables from the slow cooker and set aside.
  9. For gravy: Strain the cooking liquid into a saucepan. Skim off any excess fat.
  10. In a small bowl, whisk together cornstarch and cold water to create a slurry.
  11. Bring the cooking liquid to a simmer over medium heat. Gradually whisk in the cornstarch slurry until the gravy thickens. Season with salt and pepper if needed.
  12. Slice or shred the pot roast and serve with the vegetables and gravy.

Notes

  • For a richer flavor, you can add a packet of dry onion soup mix to the slow cooker.
  • If you don’t have red wine, you can substitute with an additional 1/2 cup of beef broth.
  • This pot roast pairs well with mashed potatoes or egg noodles.
