Easiest Ever Crockpot Lasagna: Hands-Off Comfort Food

  • 1 pound ground beef
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10 ounce) box no-boil lasagna noodles
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain the fat completely.
  2. In a medium bowl, mix the ricotta cheese, egg, Italian seasoning, salt, and pepper until combined.
  3. Spread a thin layer of marinara sauce on the bottom of a 6-quart slow cooker.
  4. Arrange one layer of no-boil lasagna noodles over the sauce. You may need to break some noodles to fit.
  5. Spread half of the ricotta mixture evenly over the noodles.
  6. Sprinkle one-third of the mozzarella cheese over the ricotta layer.
  7. Spoon half of the browned ground beef over the mozzarella.
  8. Spoon about one-third of the remaining marinara sauce over the meat.
  9. Repeat the layers: noodles, remaining ricotta mixture, one-third of the mozzarella, remaining ground beef, and another layer of sauce.
  10. Place the final layer of noodles on top. Cover with the remaining marinara sauce and the remaining mozzarella cheese, then sprinkle with Parmesan cheese.
  11. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 2.5 to 3 hours. The noodles should be tender.
  12. Let the crockpot lasagna rest for 10 minutes before slicing and serving.

Notes

  • Using no-boil noodles makes this a true dump and go dinner.
  • If you prefer a richer flavor, use 1.5 pounds of ground beef.
  • This recipe works well for meal prep; leftovers reheat nicely.
