  • 3 lbs yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup butter
  • 2 tablespoons olive oil
  • Baguettes, sliced
  • 1 cup shredded Gruyere cheese
  • 1 cup shredded Swiss cheese

Instructions

  1. In your crockpot, combine the sliced onions, minced garlic, beef broth, white wine, Worcestershire sauce, thyme, salt, and pepper.
  2. Cook on low for 8-10 hours or on high for 4-5 hours, until onions are very tender and caramelized.
  3. About 30 minutes before serving, melt butter and olive oil in a skillet over medium heat. Add baguette slices and toast until golden brown on both sides.
  4. Top each toasted baguette slice with a mix of Gruyere and Swiss cheese.
  5. Place the cheesy baguette slices under the broiler for 1-2 minutes, until cheese is melted and bubbly.
  6. Ladle the soup into oven-safe bowls. Top each bowl with a cheesy baguette slice.
  7. Serve immediately.
