You can create an incredibly moist and savory meatloaf with this easy Crockpot French Onion Meatloaf recipe. Slow cooking ensures a tender texture, while French onion soup and caramelized onions deliver deep flavor, finished with gooey Swiss cheese.

  • 2 pounds ground beef
  • 1 large yellow onion, finely chopped and caramelized
  • 1 packet dry onion soup mix (like Lipton)
  • 1 can (10.5 ounces) condensed French onion soup, undiluted
  • 1/2 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 ounces Swiss cheese, sliced or shredded

Instructions

  1. In a large bowl, gently combine the ground beef, caramelized onion, dry onion soup mix, breadcrumbs, egg, Worcestershire sauce, pepper, and salt. Mix just until combined; do not overmix.
  2. Shape the mixture into a loaf shape and place it in the bottom of your slow cooker insert.
  3. Pour the undiluted French onion soup evenly over the top of the meatloaf.
  4. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 2.5 to 3 hours.
  5. About 15 minutes before the cooking time ends, remove the lid and arrange the Swiss cheese slices or sprinkle the shredded cheese over the top of the meatloaf.
  6. Replace the lid and allow the cheese to melt completely.
  7. Carefully remove the meatloaf from the slow cooker and let it rest for 10 minutes before slicing and serving with the pan juices.

Notes

  • Caramelizing the onion beforehand adds the best depth of flavor, but for a quicker meal, you can skip caramelizing and just mix in the raw, finely chopped onion with the meat mixture.
  • If your slow cooker is very large, you can shape the meat mixture into a flatter oval to ensure it cooks evenly.
