- 2 pounds beef chuck roast, cut into 1-inch pieces
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1/4 cup Worcestershire sauce
- 1 teaspoon dried thyme
- 1/4 cup cornstarch
- 1/4 cup cold water
- 1 pound egg noodles
- 2 tablespoons butter
- Season beef tips with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Brown beef tips on all sides.
- Transfer beef to a slow cooker.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Add the cooked onion and garlic to the slow cooker.
- Pour in beef broth and Worcestershire sauce. Add thyme.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender.
- In a small bowl, whisk together cornstarch and cold water to create a slurry.
- Stir the slurry into the slow cooker during the last 30 minutes of cooking. Cook until gravy has thickened.
- Cook egg noodles according to package directions. Drain and toss with butter.
- Serve beef tips and gravy over the buttered egg noodles.
