  • 2 pounds beef chuck roast, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • 1 pound egg noodles
  • 2 tablespoons butter

Instructions

  1. Season beef tips with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Brown beef tips on all sides.
  3. Transfer beef to a slow cooker.
  4. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Add the cooked onion and garlic to the slow cooker.
  6. Pour in beef broth and Worcestershire sauce. Add thyme.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender.
  8. In a small bowl, whisk together cornstarch and cold water to create a slurry.
  9. Stir the slurry into the slow cooker during the last 30 minutes of cooking. Cook until gravy has thickened.
  10. Cook egg noodles according to package directions. Drain and toss with butter.
  11. Serve beef tips and gravy over the buttered egg noodles.

Notes

  • For a thicker gravy, use more cornstarch slurry.
  • You can add sliced mushrooms with the onions for extra flavor.
