  • 1 cup chopped yellow onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped carrots
  • 4 cups chicken broth

  • 1/4 teaspoon garlic powder
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup heavy cream
  • Optional toppings: cooked bacon, shredded cheddar cheese, chopped chives

Instructions

  1. Place diced potatoes, onion, celery, and carrots in your slow cooker.
  2. Pour in chicken broth and season with salt, pepper, and garlic powder.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
  4. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  5. Gradually whisk in milk until smooth. Cook, stirring constantly, until thickened.
  6. Stir the milk mixture into the slow cooker.
  7. Add shredded cheddar cheese and heavy cream. Stir until cheese is melted and soup is creamy.
