Enjoy a lighter, crispy take on classic eggplant Parmesan baked in your oven. This recipe features perfectly breaded eggplant, rich marinara sauce, and melted mozzarella for a satisfying Italian dinner.

  • 2 medium eggplants, sliced 1/2-inch thick
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with oregano, garlic powder, salt, and pepper.
  3. Dip each eggplant slice first into the flour, then into the eggs, and finally coat thoroughly with the panko mixture.
  4. Place the breaded eggplant slices in a single layer on the prepared baking sheets. Drizzle each slice with a little olive oil.
  5. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  6. Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
  7. Arrange half of the crispy eggplant slices over the sauce. Top with half of the remaining marinara sauce and half of the mozzarella and Parmesan cheeses.
  8. Repeat with the remaining eggplant slices, marinara sauce, and cheeses.
  9. Bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  10. Let it rest for a few minutes before serving. Garnish with fresh basil if desired.
