Enjoy juicy, golden-brown chicken thighs with a strong garlic flavor. This simple recipe is perfect for weeknight dinners and meal prep.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. Pat the chicken thighs completely dry with paper towels. This is key for crispy skin.
  3. In a small bowl, mix together the olive oil, salt, pepper, garlic powder, paprika, onion powder, and cayenne pepper (if using).
  4. Rub the spice mixture all over the chicken thighs, making sure to get under the skin as well.
  5. Place the chicken thighs skin-side up on the prepared baking sheet. Ensure they are not overcrowded; give them space to crisp up.
  6. Bake for 30-35 minutes, or until the skin is golden brown and crispy, and the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 5 minutes before serving.

Notes

  • For extra crispy skin, you can place the chicken on a wire rack set inside the baking sheet.
  • This recipe is great for meal prep. Store cooked chicken in an airtight container in the refrigerator for up to 3 days.
  • Serve with your favorite roasted vegetables for a complete sheet pan dinner.
