Instructions

  1. Wash and dry the potatoes completely. You do not need to peel them if you prefer the skin on.
  2. Slice the potatoes very thinly, aiming for 1/16-inch thickness. A mandoline slicer works best for uniform slices.
  3. Place the potato slices in a large bowl of cold water for at least 30 minutes. This removes excess starch, which helps them crisp up.
  4. Drain the water and rinse the slices under cold running water until the water runs clear.
  5. Lay the slices out on clean kitchen towels or paper towels and pat them completely dry. Moisture prevents crisping.
  6. In the bowl, toss the dry potato slices with the olive oil, sea salt, garlic powder, and paprika until they are lightly coated.
  7. Preheat your air fryer to 350°F (175°C).
  8. Place the seasoned potato slices in a single layer in the air fryer basket. Work in batches to avoid overcrowding, which causes steaming instead of crisping.
  9. Air fry for 10 to 15 minutes, shaking the basket every 5 minutes, until the chips are golden brown and crunchy. Cooking time varies by air fryer model.
  10. Remove the chips immediately and place them on a wire rack to cool completely. They will crisp up more as they cool.
