  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 4 cups low-sodium chicken broth
  • 8 ounces cream cheese, cut into cubes
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the shredded chicken, diced green chilies, cannellini beans, Great Northern beans, and corn.
  4. Pour in the chicken broth. Add the cumin, oregano, and cayenne pepper, if using. Bring the mixture to a simmer.
