  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

  • 1 1/2 cups beef broth
  • 1 1/2 pounds potatoes, peeled and diced into 1/2-inch cubes
  • 1/2 cup heavy cream
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic, salt, pepper, and paprika, and cook for 1 minute more until fragrant.
  3. Pour in the beef broth and add the diced potatoes. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the potatoes are tender, stirring occasionally.
  4. Stir in the heavy cream and shredded cheddar cheese. Cook, stirring, until the cheese is melted and the sauce is creamy, about 2-3 minutes.
