This recipe delivers an ultra-creamy, cheesy mac and cheese that you can make on the stovetop or bake. It uses simple ingredients and is perfect for a quick weeknight meal or a holiday side dish.

Ingredients

  • 1 pound elbow macaroni
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 4 cups shredded sharp cheddar cheese
  • 2 cups shredded Gruyere cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Breadcrumbs for topping

Instructions

  1. Cook macaroni according to package directions. Drain and set aside.
  2. While macaroni cooks, melt butter in a large saucepan over medium heat. Whisk in flour and cook for 1 minute, whisking constantly.
  3. Gradually whisk in milk and heavy cream until smooth. Bring to a simmer, stirring constantly, until the sauce thickens, about 5-7 minutes.
  4. Remove from heat. Stir in cheddar, Gruyere, and Monterey Jack cheeses until melted and smooth. Season with salt and pepper.
  5. Add cooked macaroni to the cheese sauce and stir to combine.
  6. For stovetop: Serve immediately.
  7. For baked: Pour macaroni and cheese into a greased 9×13 inch baking dish. Top with breadcrumbs if desired. Bake at 375°F (190°C) for 20-25 minutes, or until bubbly and golden brown.
