12 ounces pasta
1 tablespoon olive oil
3 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 1/2 cups chicken broth or vegetable broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Juice of 1 lemon
Salt and black pepper to taste
Fresh parsley, chopped, for garnish
Instructions
Cook pasta according to package directions in a large pot or skillet. Drain, reserving about 1/2 cup of pasta water.
While pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes and cook until fragrant, about 1 minute.
Pour in chicken broth and heavy cream. Bring to a simmer.
Stir in grated Parmesan cheese and lemon juice. Season with salt and pepper.
Add the cooked pasta to the skillet with the sauce. Toss to coat. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
Serve immediately, garnished with fresh parsley.
Notes
For a lighter version, you can substitute Greek yogurt for some of the heavy cream.
