  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium-high heat until browned, breaking it up with a spoon. Drain off excess grease.
  2. Add the olive oil to the pot. Add the chopped onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and add the undrained diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
  5. Stir in the heavy cream and Parmesan cheese. Heat through, but do not boil.
  6. Add the fresh spinach and stir until wilted, about 1-2 minutes.
  7. Season with salt and freshly ground black pepper to taste. Serve hot.
