- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 6 cups chicken broth
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and freshly ground black pepper to taste
- In a large pot or Dutch oven, cook the Italian sausage over medium-high heat until browned, breaking it up with a spoon. Drain off excess grease.
- Add the olive oil to the pot. Add the chopped onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in the minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
- Pour in the chicken broth and add the undrained diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
- Stir in the heavy cream and Parmesan cheese. Heat through, but do not boil.
- Add the fresh spinach and stir until wilted, about 1-2 minutes.
