A quick and comforting chicken dinner with a rich white sauce, perfect for picky eaters. Serve it over pasta or rice for a complete meal.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1.5 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1 cup fresh spinach, 8 oz mushrooms, sliced

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5-7 minutes.
  2. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  3. Pour in heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
  4. Reduce heat to low and stir in grated Parmesan cheese until melted and the sauce is smooth.
  5. Season with salt and pepper. If using, stir in spinach and mushrooms and cook until spinach wilts and mushrooms are tender.
  6. Serve immediately over your favorite pasta or rice.

Notes

  • For extra creamy sauce, ensure your Parmesan cheese melts completely before serving.
  • Add a pinch of red pepper flakes for a little heat.
  • This dish pairs well with a simple side salad.
