  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon ranch seasoning powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) package potato gnocchi, uncooked
  • 4 ounces cream cheese, cut into cubes
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 4 slices bacon, cooked and crumbled (optional)
  • 2 cups fresh spinach

Instructions

  1. Season the chicken pieces with ranch seasoning, garlic powder, onion powder, and black pepper.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5 to 7 minutes. You do not need to cook it completely through yet.
  3. Add the uncooked gnocchi, cream cheese cubes, and chicken broth to the skillet. Bring the mixture to a simmer, stirring occasionally to help the cream cheese melt.
  4. Reduce the heat to medium-low, cover the skillet, and cook for 5 minutes, or until the gnocchi is tender. Stir well to combine everything into a creamy sauce.
  5. Stir in the heavy cream, cheddar cheese, and Parmesan cheese until the sauce is smooth and melted. Continue to cook for 2 minutes until the sauce thickens slightly.
  6. Stir in the fresh spinach until it wilts into the sauce, about 1 minute.
  7. Remove the skillet from the heat. Stir in the crumbled bacon, if using.
  8. Serve the Creamy Crack Chicken Gnocchi immediately in bowls.

Notes

  • For a thicker sauce, let the mixture simmer uncovered for an extra 2 to 3 minutes before adding the spinach.
