  • 1 tablespoon tomato paste
  • 1/2 cup reserved pasta water
  • 8 ounces dried pasta (penne or rotini work well)
  • Fresh basil, chopped, for garnish

Instructions

  1. Season the chicken pieces with salt, pepper, and Italian seasoning.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and garlic powder and cook for 1 minute until fragrant.
  4. Stir in the tomato paste and cook for 1 minute.
  5. Pour in the chicken broth and bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot.
  6. Add the dried pasta to the pot. Add enough water to cover the pasta by about one inch. Bring back to a boil, then reduce heat to maintain a steady simmer. Cook according to package directions, stirring often to prevent sticking.
  7. When the pasta is nearly done (about 2 minutes before the suggested time), stir in the heavy cream, chopped sun-dried tomatoes, and the cooked chicken.
  8. Stir in the Parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, add a splash of reserved pasta water until you reach your desired consistency.
