A simple and delicious creamy carbonara recipe featuring crispy bacon and a silky egg sauce, perfect for a quick weeknight dinner.

  • 1 pound spaghetti
  • 6 ounces bacon, diced
  • 2 cloves garlic, minced
  • 4 large eggs
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup reserved pasta water

Instructions

  1. Cook spaghetti according to package directions. Reserve 1/4 cup pasta water before draining.
  2. While pasta cooks, cook diced bacon in a large skillet over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the skillet.
  3. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  4. In a medium bowl, whisk together eggs, Parmesan cheese, black pepper, and salt.
  5. Add the drained hot spaghetti to the skillet with the garlic. Remove skillet from heat.
  6. Quickly pour the egg and cheese mixture over the hot pasta. Toss rapidly to coat the pasta. The residual heat will cook the eggs and create a creamy sauce.
  7. Add reserved pasta water a tablespoon at a time, if needed, to reach desired sauce consistency.
  8. Stir in the cooked bacon.
  9. Serve immediately.

Notes

  • For a no-scramble sauce, ensure the skillet is removed from the heat before adding the egg mixture.
  • Toss the pasta constantly to ensure even cooking of the egg sauce.
  • You can add a splash of heavy cream for extra richness, though it’s not traditional.
