Make these simple Cranberry Brie Bites, the ultimate crowd-pleasing appetizer for your next party. Flaky puff pastry holds creamy brie and tart cranberry sauce, baking into a warm, gooey finger food.

  • 1 package (14.1 ounces) frozen puff pastry, thawed
  • 1 wheel (8 ounces) brie cheese, rind removed and cut into small cubes
  • 1 cup whole berry cranberry sauce
  • 1/4 cup chopped pecans (optional)
  • 1 egg, beaten (for egg wash)
  • Crackers or apple slices, for serving

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Unfold the thawed puff pastry sheets. Use a 2-inch round cookie cutter to cut out circles from the pastry. You should get about 18 to 24 circles.
  3. Place the pastry circles on the prepared baking sheet.
  4. Place one small cube of brie cheese in the center of each pastry circle.
  5. Top the brie with about 1/2 teaspoon of cranberry sauce. If you are using pecans, sprinkle a few pieces over the sauce.
  6. Fold the pastry edges up and around the filling to create a small pouch or bundle. Pinch the seams firmly together to seal the filling inside. You can also gently press the edges with a fork to seal.
  7. Brush the tops of the sealed bites lightly with the beaten egg wash.
  8. Bake for 12 to 15 minutes, or until the puff pastry is golden brown and puffed, and the cheese inside is melted and gooey.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes before serving warm with crackers or apple slices.

Notes

  • If you prefer a whole baked brie presentation, skip cutting the pastry and wrap the entire wheel of brie in one large sheet of pastry, sealing the edges underneath. Score the top before baking.
  • For an extra layer of flavor, mix a teaspoon of orange zest into the cranberry sauce before topping the cheese.
  • These are best served immediately while the brie is still warm and melted.
