  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, cut into small cubes
  • 1/4 cup cranberry sauce

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry sheet onto a lightly floured surface.
  3. Use a small round cutter (about 2 inches) to cut circles from the pastry. You should get about 12 to 16 circles.
  4. Gently press the pastry circles into the wells of a mini muffin tin to form small cups.
  5. Place a small cube of brie cheese into the bottom of each pastry cup.
  6. Top the brie with about 1/2 teaspoon of cranberry sauce.
  7. Bake for 12 to 15 minutes, or until the pastry is golden brown and the brie is melted and gooey.
  8. Remove from the oven and let the cranberry brie bites cool in the tin for a few minutes before carefully transferring them to a wire rack to cool slightly before serving warm.

Notes

  • For an extra touch, sprinkle a tiny pinch of flaky sea salt over the cranberry sauce before baking.
  • If you want a richer flavor, use a brie wheel with the rind removed.
  • These are best served warm, but you can assemble them ahead of time and bake them right before your guests arrive.
