A creamy, bacon ranch-flavored potato soup made in your slow cooker. This dump-and-go recipe is perfect for busy weeknights and family dinners.

Ingredients

  • 4 cups potatoes, peeled and cubed
  • 1 cup chicken broth
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup shredded cheddar cheese
  • 2 green onions, chopped

Instructions

  1. Place cubed potatoes in your slow cooker.
  2. Pour chicken broth over potatoes.
  3. Sprinkle ranch seasoning mix over potatoes.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
  5. Stir in sour cream and milk. Cook for another 15-20 minutes, or until heated through. Do not boil.
  6. Ladle soup into bowls.
  7. Top with crumbled bacon, shredded cheddar cheese, and chopped green onions.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the slow cooker before adding the sour cream and milk.
