Baked High-Protein Cottage Cheese Sticks

Make these simple, savory cottage cheese sticks for a high protein, low carb snack or appetizer. They are easy to prepare and bake up firm and satisfying.

  • 1 cup dry curd cottage cheese, pressed well to remove excess moisture
  • 1 large egg
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil for brushing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the well-drained cottage cheese, egg, almond flour, Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix until just combined into a thick dough.
  3. Transfer the mixture to a piece of plastic wrap or parchment paper. Shape the mixture into a log about 1 inch thick. Wrap tightly and chill in the refrigerator for at least 30 minutes to firm up. This step is important for easy cutting.
  4. Remove the chilled log and place it on a cutting board. Cut the log into 8 to 10 stick shapes, similar to mozzarella sticks.
  5. Place the sticks on the prepared baking sheet. Lightly brush the tops with olive oil.
  6. Bake for 15 to 18 minutes, or until the sticks are golden brown and firm to the touch.
  7. Let them cool slightly on the baking sheet before serving.

Notes

  • For an air fryer option, cook at 375°F (190°C) for 8 to 10 minutes, flipping halfway through.
  • Serve these protein packed finger food sticks with marinara sauce or ranch dressing.
  • If you want a crispier exterior, lightly coat the sticks in a small amount of extra almond flour before baking.
