  • 1 cup cottage cheese
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup shredded cheese (cheddar, Monterey Jack)
  • Optional: 2 tablespoons chopped chives or green onions

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or use silicone muffin liners.
  2. In a blender, combine cottage cheese, eggs, milk, salt, and pepper. Blend until smooth and creamy.
  3. If using, stir in shredded cheese and chopped chives into the blended mixture.
