A vibrant and flavorful Cajun corn sauté with bell peppers and onions, perfect as a holiday side dish or cookout accompaniment.

Ingredients

  • 2 tablespoons butter
  • 1 cup chopped yellow onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 4 cups fresh or frozen corn kernels
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream (optional)
  • 4 slices bacon, cooked and crumbled (optional)

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add onion and bell peppers and cook until softened, about 5-7 minutes.
  3. Stir in corn, salt, and pepper. Cook, stirring occasionally, until corn is tender, about 8-10 minutes.
  4. If using, stir in heavy cream and cook for 1-2 minutes until slightly thickened.
  5. If using, stir in crumbled bacon just before serving.
