Copycat Panera Broccoli Cheddar Soup

Enjoy a creamy, cheesy broccoli cheddar soup that tastes just like Panera’s, made easily at home. This one-pot recipe is perfect for a comforting weeknight dinner.

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion (about 1 medium)
  • 2 cloves garlic, minced
  • 4 cups broccoli florets (from about 1 lb broccoli)
  • 4 cups low-sodium chicken broth
  • 2 cups milk
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons all-purpose flour
  • 1/4 cup water

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in broccoli florets and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes, or until broccoli is tender.
  4. Carefully transfer about half of the soup to a blender (or use an immersion blender directly in the pot) and blend until smooth. Return the pureed soup to the pot.
  5. Stir in milk, salt, pepper, and nutmeg. Heat gently over medium-low heat until warmed through. Do not boil.
  6. In a small bowl, whisk together the flour and water until smooth to create a slurry.
  7. Gradually stir the slurry into the soup. Cook, stirring constantly, for 2-3 minutes until the soup thickens slightly.
  8. Remove the pot from the heat. Stir in the shredded cheddar and Monterey Jack cheeses until melted and smooth.
  9. Taste and adjust seasoning with salt and pepper if needed. Serve hot.

Notes

  • For a thicker soup, you can add a little more cheese or a bit more of the flour slurry.
  • If you don’t have a blender, you can mash the broccoli against the side of the pot with a spoon for a chunkier soup.
