1 store-bought or homemade pie crust
4 large ripe tomatoes, sliced
1 teaspoon salt, plus more for seasoning
1/2 cup mayonnaise
1/4 cup chopped fresh basil
1/4 cup chopped yellow onion
1/2 cup shredded cheddar cheese
1/4 teaspoon black pepper
Instructions
Preheat your oven to 375°F (190°C).
Place tomato slices in a single layer on paper towels. Sprinkle with 1 teaspoon salt and let sit for 15-20 minutes to draw out moisture. Pat dry with paper towels.
In a medium bowl, combine mayonnaise, basil, onion, cheddar cheese, and black pepper.
Spread half of the cheese mixture evenly over the bottom of the pie crust.
Arrange the drained tomato slices over the cheese mixture.
Top the tomatoes with the remaining cheese mixture.
Bake for 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
Let the pie cool for at least 15 minutes before slicing and serving.

Salting and draining your tomatoes is key to preventing a watery pie.
