Cilantro Lime Rice (Chipotle Copycat)

Make fluffy, fragrant cilantro lime rice at home, just like Chipotle. This easy recipe is perfect for burrito bowls, tacos, or fajitas.

Ingredients

  • 2 cups long-grain white rice
  • 2 cups water
  • 1/4 cup fresh lime juice (from about 2 limes)
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Lime wedges, for serving

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, water, olive oil, salt, cumin, and garlic powder.
  3. Bring the mixture to a boil over medium-high heat.
  4. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
  5. Remove the saucepan from the heat and let it sit, covered, for 5 minutes.
  6. Fluff the rice with a fork.
  7. Stir in the fresh lime juice and chopped cilantro.
  8. Serve immediately with lime wedges.

Notes

  • For an Instant Pot version, combine all ingredients except cilantro and lime juice in the Instant Pot. Cook on high pressure for 3 minutes, then natural release for 10 minutes. Fluff and stir in cilantro and lime juice.
  • You can substitute lemon juice for half of the lime juice for a slightly different flavor.
  • This rice is a great base for meal planning.
