2 cups long-grain white rice
2 cups water
1/4 cup fresh lime juice (from about 2 limes)
1/4 cup chopped fresh cilantro
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
Lime wedges, for serving
Instructions
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice, water, olive oil, salt, cumin, and garlic powder.
Bring the mixture to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
Remove the saucepan from the heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork.
Stir in the fresh lime juice and chopped cilantro.
Serve immediately with lime wedges.
Notes
For an Instant Pot version, combine all ingredients except cilantro and lime juice in the Instant Pot. Cook on high pressure for 3 minutes, then natural release for 10 minutes. Fluff and stir in cilantro and lime juice.
You can substitute lemon juice for half of the lime juice for a slightly different flavor.
