Ingredients

Scale
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 3 very ripe mashed bananas (about 1 1/2 cups)
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, stir together the baking soda, salt, and sugar.
  3. Add the melted butter, beaten egg, and vanilla extract to the bowl. Mix well.
  4. Stir in the mashed bananas until just combined.
  5. Fold in the flour until just combined. Do not overmix.
  6. Gently stir in the chocolate chips.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For best results, use very ripe bananas with plenty of brown spots.
  • You can substitute half of the chocolate chips with chopped nuts if desired.
  • This bread freezes well. Wrap it tightly in plastic wrap and then foil. It will keep for up to 3 months in the freezer.
  • To reheat, thaw at room temperature or warm slices in the oven or microwave.
