  • 4 ounces dried chipped beef, thinly sliced
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk, warmed
  • 1/4 teaspoon black pepper
  • Pinch of salt (taste first due to salty beef)
  • 8 slices sturdy white bread or Texas toast
  • 4 tablespoons butter for toasting bread

Instructions

  1. Prepare the toast: Spread 1 tablespoon of butter on one side of each slice of bread. Toast the bread in a skillet over medium heat, butter-side down, until golden brown and crisp. Set the toast aside.
  2. Melt the butter in a medium saucepan over medium heat.
  3. Whisk the flour into the melted butter. Cook, stirring constantly, for 1 minute to create a roux.
  4. Slowly whisk in the warm milk until the mixture is smooth. Continue to cook, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes. This is your white gravy.
  5. Stir in the black pepper and salt. Taste the gravy and add more pepper if desired. Remember the chipped beef is salty.
  6. Add the sliced chipped beef to the gravy. Simmer gently for 2 to 3 minutes, allowing the beef to soften slightly and absorb the sauce. Do not boil.
  7. Place two slices of prepared toast on each plate. Spoon the creamy chipped beef mixture evenly over the toast. Serve immediately.

  • For a richer flavor, use half-and-half instead of whole milk in the gravy.
  • If you prefer a thicker gravy, cook the roux for an extra minute or use 5 tablespoons of flour.
