Make flavorful, satisfying salmon tacos perfect for a quick weeknight dinner. This recipe combines sweet and smoky chipotle honey salmon with a bright, zesty avocado slaw for a meal that brings people together.

Ingredients

Scale
  • 1.5 lbs salmon fillets, skin removed
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon chipotle powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 12 small corn or flour tortillas
  • For the Zesty Avocado Slaw:
  • 3 cups shredded cabbage mix
  • 1 ripe avocado, mashed
  • 1/4 cup lime juice, fresh
  • 2 tablespoons Greek yogurt or sour cream
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon salt

Instructions

  1. Prepare the salmon seasoning: In a small bowl, mix the honey, chipotle powder, smoked paprika, garlic powder, salt, and pepper. Rub this mixture evenly over the salmon fillets.
  2. Cook the salmon: Heat the olive oil in a large skillet over medium-high heat. Place the salmon in the skillet and cook for 4 to 6 minutes per side, until the salmon flakes easily with a fork and is cooked through. Remove from heat and let rest for 5 minutes before flaking into large chunks.
  3. Make the slaw: In a medium bowl, whisk together the mashed avocado, lime juice, Greek yogurt, cilantro, and salt until smooth. Gently fold in the shredded cabbage mix until everything is coated.
  4. Warm the tortillas: Warm the tortillas according to package directions, either in a dry skillet or wrapped in a damp paper towel in the microwave.
  5. Assemble the tacos: Place a portion of the flaked chipotle honey salmon onto each warm tortilla. Top generously with the zesty avocado slaw. Serve immediately.

Notes

  • If you are looking for simple weeknight solutions, this recipe is faster than using meal planning services.
  • For an extra layer of flavor, you can grill the salmon instead of pan-searing it.
  • If you prefer a spicier kick, add a pinch of cayenne pepper to the chipotle honey glaze.
