This is the ultimate comfort food: a hearty, creamy chicken wild rice casserole packed with savory flavor and topped with a crisp Parmesan crust. It is an easy, satisfying weeknight dinner your whole family will request often.

  • 1 pound boneless, skinless chicken breasts, cooked and shredded

  • 8 ounces cremini mushrooms, sliced

  • 1 (10.5 ounce) can cream of chicken soup (low sodium preferred)
  • 1 (10.5 ounce) can cream of mushroom soup (low sodium preferred)
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups cooked wild rice blend
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion, mushrooms, celery, and carrots. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the shredded cooked chicken, cream of chicken soup, cream of mushroom soup, chicken broth, thyme, pepper, and salt into the skillet. Mix well until combined.
  4. Remove the skillet from the heat. Fold in the cooked wild rice and the sour cream or Greek yogurt until the mixture is smooth and creamy.
  5. Spread the chicken and rice mixture evenly into your prepared baking dish. Sprinkle the Monterey Jack cheese over the top.
  6. In a small bowl, combine the Panko breadcrumbs, grated Parmesan cheese, and melted butter. Toss until the breadcrumbs are coated. Sprinkle this mixture evenly over the cheese layer.
  7. Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is golden brown and crisp.
