Make cheesy, crispy chicken quesadillas with leftover chicken in under 20 minutes. A budget-friendly family dinner perfect for busy weeknights.

Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cooked chicken (rotisserie or leftover)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 tablespoon butter or oil
  • Optional toppings: salsa, sour cream, guacamole

Instructions

  1. Spread half the cheese over one half of each tortilla.
  2. Top the cheese with shredded chicken.
  3. Sprinkle the remaining cheese over the chicken.
  4. Fold the other half of each tortilla over the filling.
  5. Heat butter or oil in a skillet over medium heat.
  6. Carefully place the folded tortillas in the skillet.
  7. Cook for 3-4 minutes per side, until golden brown and crispy, and the cheese is melted.
  8. Cut into wedges and serve immediately with your favorite toppings.
