Instructions

  1. Cook the fettuccine pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining. Set the drained pasta aside.
  2. Season the chicken pieces lightly with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium-low. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
  4. Pour in the heavy cream. Bring the mixture to a gentle simmer, stirring often. Let it simmer for 3 to 5 minutes until the sauce thickens slightly.
  5. Remove the skillet from the heat. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. This step must be done off the heat to prevent the cheese from clumping.
  6. Stir in the salt and pepper. If the sauce seems too thick, add a splash or two of the reserved pasta water until you reach your desired consistency for this homemade creamy pasta.
