Easy Scratch-Made Chicken Divan Casserole

You can easily make this creamy Chicken Divan with tender chicken and broccoli tonight. This easy casserole recipe brings comforting flavors to your family dinner.

Ingredients

  • 2 cups cooked, shredded chicken
  • 4 cups fresh broccoli florets
  • 1 tablespoon butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Blanch the broccoli florets in boiling water for 2 minutes until bright green. Drain them well and set aside.
  3. Make the sauce: Melt 1 tablespoon of butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in the milk until the mixture is smooth. Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes.
  5. Remove the sauce from the heat. Stir in the Dijon mustard, salt, and pepper. Add 3/4 cup of the shredded cheddar cheese and stir until melted and smooth. This is your Mornay-style sauce.
  6. In a large bowl, combine the shredded chicken and blanched broccoli. Pour the cheese sauce over the chicken and broccoli mixture and stir gently to coat everything evenly.
  7. Transfer the mixture to your prepared baking dish.
  8. In a small bowl, combine the panko breadcrumbs with the 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the casserole. Sprinkle the remaining 1/4 cup of cheddar cheese over the breadcrumbs.
  9. Bake for 20 to 25 minutes, or until the casserole is bubbly and the topping is golden brown.
  10. Let the Chicken Divan Casserole rest for 5 minutes before you serve it. Serve this comforting meal with rice or crusty bread.

Notes

  • For a richer flavor, use leftover rotisserie chicken.
  • If you want a Paula Deen Style Chicken Divan, you can add a dash of Worcestershire sauce to the cheese sauce.
  • You can substitute fresh broccoli with frozen broccoli, but thaw and drain it very well before using.
