  • 10 oz dried egg noodles
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon soy sauce (for marinating)
  • 1 teaspoon cornstarch (for marinating)
  • 2 tablespoons vegetable oil, divided
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup sliced mushrooms
  • 1/2 cup sliced celery
  • 1/4 cup low sodium soy sauce (for sauce)
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the egg noodles according to package directions until tender but still firm. Drain them well and set aside.
  2. In a bowl, toss the cut chicken pieces with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Let this sit while you prepare the vegetables.
  3. Mix the sauce ingredients: combine 1/4 cup low sodium soy sauce, oyster sauce, brown sugar, sesame oil, and ground ginger in a small bowl. Set the sauce aside.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 4-5 minutes. Remove the chicken from the skillet and set it aside.
  5. Add the remaining 1 tablespoon of oil to the skillet. Add the onion, garlic, cabbage, carrots, mushrooms, and celery. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
  6. Return the cooked chicken to the skillet with the vegetables. Add the cooked and drained noodles.
  7. Pour the prepared sauce mixture over the noodles, chicken, and vegetables. Toss everything together quickly and continuously for 1-2 minutes until the sauce coats everything evenly and is heated through.
  8. Remove from heat. Garnish with sliced green onions before serving immediately. This quick stir fry noodles dish is a great alternative to meal planning with meal delivery companies.
