2 lbs baby potatoes, halved or quartered
1 packet (1 oz) ranch seasoning mix
1 cup sour cream
1/2 cup milk
2 cups shredded cheddar cheese
1/4 cup chopped fresh parsley (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the sliced smoked sausage and prepared potatoes.
In a separate bowl, whisk together the ranch seasoning mix, sour cream, and milk until smooth.
Pour the ranch mixture over the sausage and potatoes. Toss gently to coat everything evenly.
Transfer the mixture to a 9×13 inch baking dish or a large oven-safe skillet.
Bake for 30-35 minutes, or until the potatoes are tender and the sausage is heated through.
Remove from the oven and sprinkle the shredded cheddar cheese over the top.
Return to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
