  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened

  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. Line a standard 12-cup muffin tin with paper liners.
  2. Prepare the crust: In a small bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press about 1 tablespoon of the crumb mixture firmly into the bottom of each lined muffin cup. Bake the crusts for 5 minutes. Remove from the oven and let them cool slightly.
  4. Prepare the filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the 1/2 cup sugar, sour cream, and vanilla extract. Mix until just combined.
  5. Beat in the eggs one at a time, mixing only until each egg is incorporated. Do not overmix the batter.
  6. Spoon or pipe the cheesecake filling evenly over the cooled crusts, filling each cup about three-quarters full.
  7. Bake for 18 to 22 minutes. The edges should look set, but the centers will still have a slight jiggle.
  8. Turn off the oven, crack the door open slightly, and let the cheesecake cupcakes cool inside the oven for 30 minutes. This step helps prevent cracking.
  9. Remove the cupcakes from the oven and let them cool completely on a wire rack.
  10. Chill the cheesecake cupcakes in the refrigerator for at least 4 hours, or preferably overnight, before serving with your favorite topping.
