Ingredients
Scale
1 tablespoon olive oil
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1 (14.5 ounce) can diced tomatoes, undrained
4 cups beef broth
8 ounces elbow macaroni or rotini pasta
1 teaspoon Worcestershire sauce
1/2 cup ketchup
1 tablespoon yellow mustard
1 cup heavy cream or milk
2 cups shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
Optional toppings: Diced pickles, extra mustard, bacon bits
Instructions
Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and chopped onion. Cook, breaking up the meat, until the beef is browned and the onion is soft, about 5 to 7 minutes. Drain off any excess grease.
Stir in the minced garlic, salt, pepper, oregano, and garlic powder. Cook for 1 minute until fragrant.
Pour in the diced tomatoes (with juice), beef broth, Worcestershire sauce, ketchup, and mustard. Bring the mixture to a boil.
Add the dry pasta to the skillet. Stir well to submerge the pasta in the liquid.
Reduce the heat to medium-low, cover the skillet, and simmer for 10 to 14 minutes, stirring occasionally to prevent the pasta from sticking to the bottom. The pasta should be tender and most of the liquid absorbed.
Remove the skillet from the heat. Stir in the heavy cream and both cheeses until the sauce is smooth and creamy.
Taste the pasta and add more salt or pepper if needed. Serve immediately topped with diced pickles or extra mustard for that authentic cheeseburger flavor.
Notes
For an extra layer of flavor, add 4 slices of crumbled, cooked bacon when you add the cheese.
If you prefer a thicker sauce, let the pasta sit uncovered for 2-3 minutes after removing it from the heat before stirring in the cheese.
You can substitute the ground beef with ground turkey for a lighter version of this comfort food pasta recipe.
