Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups beef broth
  • 12 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped dill pickles (optional)

Instructions

  1. In a large skillet or Dutch oven, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  2. Add the olive oil to the skillet. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, salt, black pepper, paprika, garlic powder, onion powder, thyme, oregano, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in the beef broth and bring to a simmer.
  5. Add the fettuccine pasta to the skillet, ensuring it is mostly submerged in the liquid. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente.
  6. Stir in the heavy cream and Parmesan cheese. Cook, stirring, until the sauce is creamy and thickened.
  7. Add the shredded cheddar cheese and stir until melted and well combined.
  8. Stir in the fresh parsley and dill pickles (if using).
  9. Serve immediately.

Notes

  • For a richer flavor, you can add a tablespoon of tomato paste with the garlic.
  • If you don’t have dill pickles, you can use sweet pickles, but the flavor will be different.
  • This dish is great for meal planning and can be reheated.
