1 tablespoon avocado oil or sesame oil
1 pound cauliflower rice (fresh or frozen)
1 cup mixed frozen vegetables (peas, carrots, corn)
2 large eggs, lightly beaten
4 ounces shrimp, diced chicken, or cubed tofu (optional protein)
2 cloves garlic, minced
1 teaspoon grated fresh ginger
3 tablespoons low-sodium soy sauce or tamari
1 teaspoon toasted sesame oil
1/2 teaspoon ground white pepper
2 green onions, sliced, for garnish
Instructions
Heat the avocado or sesame oil in a large skillet or wok over medium-high heat.
Add the cauliflower rice to the hot pan. Cook, stirring frequently, for 5 to 7 minutes until the moisture evaporates and the rice starts to brown slightly. Remove the cauliflower rice from the pan and set aside.
Add a little more oil to the pan if needed. Pour in the beaten eggs and scramble them quickly until just set. Remove the eggs and chop them roughly. Set aside with the cauliflower rice.
If using protein, add it to the pan now. Cook until done (about 3-4 minutes for shrimp or chicken). Remove and set aside.
Add the frozen vegetables to the pan. Cook for 3 minutes until heated through.
Add the minced garlic and ginger to the pan. Cook for 30 seconds until fragrant.
Return the cooked cauliflower rice, eggs, and protein (if used) to the pan.
Pour the soy sauce and toasted sesame oil over the mixture. Sprinkle with white pepper. Toss everything together quickly for 1 to 2 minutes to combine the flavors.
Remove from heat. Garnish with sliced green onions before serving.
Notes
For a richer flavor, use coconut aminos instead of soy sauce for a soy-free option.
If you are following a strict keto meal plan delivery, skip the corn in the frozen vegetable mix.
