  • 4 large eggs
  • 4 ounces cream cheese, softened (or full-fat plain Greek yogurt for a variation)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks. Place the yolks in a small bowl and set the whites aside in a large, clean mixing bowl.
  3. In the bowl with the yolks, add the softened cream cheese and the salt. Whisk these together until the mixture is smooth and fully combined.
  4. Using an electric mixer, beat the egg whites on high speed until stiff peaks form. You want the whites to hold their shape when you lift the beaters.
  5. Gently fold about one-third of the beaten egg whites into the yolk and cream cheese mixture to lighten it.
  6. Carefully fold the remaining egg whites into the mixture in two additions. Work slowly to keep as much air in the mixture as possible; this creates the fluffy texture.
  7. Spoon four equal mounds of the batter onto the prepared baking sheet. You can shape them into rounds resembling buns.
  8. Bake for 25 to 30 minutes, or until the tops are lightly golden brown and the bread is set.
  9. Remove from the oven and let the cloud bread cool on the sheet for a few minutes before moving it to a wire rack to cool completely. Use this as your guilt free bread substitute.

Notes

  • For a slightly different texture, you can substitute the cream cheese with 4 tablespoons of full-fat plain Greek yogurt, though the texture will be slightly less stable.
  • This bread is best eaten the day it is made for the softest texture. You can lightly toast slices for carnivore toast.
  • If you want a savory bake, add a pinch of garlic powder (if your diet allows trace spices) to the yolk mixture.
