1/2 cup fresh lime juice (from about 4–5 limes)
1/4 cup olive oil
1/4 cup chopped fresh cilantro
4 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for heat)
1–2 pounds skirt steak or flank steak
Instructions
In a bowl or a large zip-top bag, combine lime juice, olive oil, cilantro, garlic, cumin, oregano, salt, pepper, and cayenne pepper (if using).
Whisk or shake well to combine the marinade ingredients.
Add the steak to the marinade, ensuring it is fully coated.
Marinate in the refrigerator for at least 2 hours, or preferably 4-8 hours for deeper flavor. For a spicier marinade, you can add a chopped jalapeño or serrano pepper to the marinade.
When ready to cook, remove the steak from the marinade and discard the excess marinade.
Grill the steak over medium-high heat for 4-6 minutes per side, or until your desired level of doneness is reached.
Let the steak rest for 5-10 minutes before slicing against the grain.
Notes
For a spicier marinade, add a chopped jalapeño or serrano pepper to the marinade mixture.
Ensure you slice the carne asada against the grain for maximum tenderness.
This marinade is also excellent for chicken or pork.
