1 sheet puff pastry, thawed
1 tablespoon olive oil
1 large yellow onion, thinly sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded Gruyere cheese
2 tablespoons hot honey
1 tablespoon fresh chives, chopped (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Heat olive oil in a skillet over medium-low heat. Add the sliced onion and salt. Cook slowly, stirring occasionally, for 20-25 minutes, or until the onions are deeply caramelized and sweet. Season with pepper.
Unfold the puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
Place about 1 teaspoon of caramelized onions onto the center of each puff pastry square.
Top the onions with about 1 tablespoon of shredded Gruyere cheese on each square.
Bring the corners of each puff pastry square towards the center and pinch them together to form a small bundle, enclosing the filling.
Place the bites on the prepared baking sheet.
Bake for 15-18 minutes, or until the puff pastry is golden brown and puffed.
Remove from the oven and immediately drizzle with hot honey. Sprinkle with fresh chives, if desired.
Serve warm.
Notes
For a shortcut, you can use store-bought caramelized onion dip instead of making your own.
These bites can be assembled a few hours ahead of time and baked just before serving.
You can substitute Swiss or Emmental cheese for Gruyere if needed.
