Enjoy a gourmet grilled cheese sandwich with sweet caramelized onions, melty Gruyere cheese, and tangy sourdough bread. This recipe offers a perfect balance of sweet and savory flavors for an easy and satisfying meal.

  • 2 tablespoons unsalted butter, divided
  • 1 large yellow onion, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices sourdough bread
  • 2 tablespoons mayonnaise
  • 4 ounces Gruyere cheese, grated or thinly sliced
  • Optional: 1 tablespoon blackberry jam

Instructions

  1. Melt 1 tablespoon of butter in a skillet over medium-low heat. Add the sliced onion, salt, and pepper. Cook, stirring occasionally, until the onions are deeply golden brown and caramelized, about 20-30 minutes. If they start to stick, add a tablespoon of water. Remove onions from the skillet and set aside.
  2. Spread mayonnaise on one side of each slice of sourdough bread.
  3. Place two slices of bread, mayonnaise-side down, in the skillet over medium heat.
  4. Layer the Gruyere cheese evenly over the bread in the skillet.
  5. Top the cheese with the caramelized onions. If using, spread blackberry jam on the un-mayonnaised side of the remaining two bread slices and place them jam-side down on top of the onions.
  6. Grill for 3-5 minutes per side, until the bread is golden brown and toasted, and the cheese is melted and gooey.
  7. Slice the sandwich in half and serve immediately.

Notes

  • For perfectly caramelized onions, use low heat and be patient.
  • You can substitute Gruyere with Swiss, cheddar, or provolone cheese.
  • A cast iron skillet helps achieve an even crisp on the bread.
  • This sandwich is delicious on its own or served with a side salad.
