1 sleeve (about 30 crackers) Ritz Crackers
1 cup (2 sticks) unsalted butter
1 cup packed light brown sugar
1/2 cup heavy cream
1 cup semi-sweet chocolate chips
1/2 cup milk chocolate chips (optional, for drizzle)
1 teaspoon vanilla extract
Holiday sprinkles (optional, for topping)
Instructions
Line a baking sheet with parchment paper. Arrange the Ritz crackers in a single layer on the prepared sheet.
In a medium saucepan, combine the butter, brown sugar, and heavy cream.
Heat the mixture over medium heat, stirring constantly until the butter melts and the sugar dissolves. Bring the mixture to a boil and continue boiling for exactly 1 minute, stirring occasionally. Do not overcook.
Remove the caramel mixture from the heat and stir in the vanilla extract.
Pour the hot caramel evenly over the Ritz crackers, making sure to coat each cracker.
Bake the crackers in a preheated oven at 350°F (175°C) for 5 to 7 minutes, or until the caramel is bubbly. Watch closely to prevent burning.
Remove the sheet from the oven. Immediately top the hot caramel layer with the semi-sweet chocolate chips. Let the chocolate sit for 3 minutes to soften.
Gently spread the melted chocolate evenly over the crackers using an offset spatula. If using milk chocolate for a drizzle, melt it separately and drizzle it over the top now.
Sprinkle with holiday sprinkles, if desired.
Allow the cookies to cool completely at room temperature, or chill them in the refrigerator for about 30 minutes until the chocolate is set.
Once firm, break the sheet into individual Caramel Ritz Cracker Christmas Cookies. Store in an airtight container.
Notes
For a peanut flavor, add 1/2 cup of chopped peanuts to the caramel mixture just before pouring it over the crackers.
If you want a thicker chocolate layer, use 1 1/2 cups of chocolate chips and melt them smoothly before pouring over the set caramel layer.
These are excellent as No Bake Christmas Desserts if you skip the baking step and simply pour the hot caramel over the crackers and let them set at room temperature.
