Make soft, chewy cookies in minutes using just three ingredients: cake mix, an egg, and butter. This simple recipe is a fast shortcut for delicious homemade treats.

  • 1 box (15.25 oz) Yellow or Vanilla Cake Mix
  • 1 large egg
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the entire box of cake mix, the egg, and the melted butter. Mix with a spoon or electric mixer until a soft dough forms. Do not overmix.
  3. Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared baking sheets.
  4. Bake for 8 to 10 minutes, or until the edges are set and the tops look slightly cracked. For softer cookies, bake closer to 8 minutes.
  5. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For Chocolate Cake Mix Cookies, use chocolate cake mix and add 1/2 cup of chocolate chips to the dough.
  • For Lemon Cake Mix Cookies, use lemon cake mix and add 1 teaspoon of lemon zest to the dough.
  • For Funfetti Cake Mix Cookies, use white or yellow cake mix and add 1/2 cup of sprinkles to the dough.
  • For Brownie Mix Cookies, use a box of brownie mix instead of cake mix, and substitute the egg with 1/2 cup of oil.
