Ingredients
Scale
1 box (15.25 oz) Yellow or Vanilla Cake Mix
1 large egg
1/2 cup unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, combine the entire box of cake mix, the egg, and the melted butter. Mix with a spoon or electric mixer until a soft dough forms. Do not overmix.
Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared baking sheets.
Bake for 8 to 10 minutes, or until the edges are set and the tops look slightly cracked. For softer cookies, bake closer to 8 minutes.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For Chocolate Cake Mix Cookies, use chocolate cake mix and add 1/2 cup of chocolate chips to the dough.
For Lemon Cake Mix Cookies, use lemon cake mix and add 1 teaspoon of lemon zest to the dough.
For Funfetti Cake Mix Cookies, use white or yellow cake mix and add 1/2 cup of sprinkles to the dough.
For Brownie Mix Cookies, use a box of brownie mix instead of cake mix, and substitute the egg with 1/2 cup of oil.
